Today I had to go to work today. It was a really big bummer however I need to work so i can afford my love of cooking hahahahahaha im just kidding I'm in college money is for books....

I had leftover eggplant parm today and I looked up the weight watchers points and I realized it was 12 points! Thats sooo bad :( wish it was less but then again eggplant parm has a lot of delicious cheese.

Tomorrow early voting starts so I guess I'll go do that (GO OBAMA. FOUR MORE YEARS) i'm just saying..

Yesterday I was in the kitchen soo long! Thats what Frankie said -_- anyways I made mac and cheese muffins which werent as amazing as I thought. I think it was kinda a let down but its okay i think today I'm making lasagna. it should be good!

I made Chicken Alfredo Pizza today and it was amazing! and soo easy!

I used a recipe I found on Emilybites.com

Ingredients:
12" Whole Wheat Pizza Crust
1/2 cup of light alfredo sauce
2 cups of spinach
1 clove of garlic, minced
1 1/2 teaspoon grated parmesan cheese
3/4 cup of low fat mozzarella cheese
2 oz of cooked chicken
1 tomato sliced
fresh parsley
Garlic powder


Preheat oven to 450 degrees farenheit. Lightly spray a pan and put spinach and garlic in it. Cook till whilted. put alfredo sauce on pizza crust on whatever youre cooking it on. add spinach, tomato slices and chicken. cover with mozzarella and parmesan.

Vanilla Pear Pancakes

So today I had a great breakfast! I found this great recipe from http://www.fatsecret.com/recipes/vanilla-pear-pancakes/Default.aspx

Its for Vanilla Pear Pancakes

The original recipe called for sweetener however I love sugar so I just kept that in there and instead of cinnamon I used pumpkin pie spice and I used cinnamon spice instant oatmeal instead of plain.

So the ingredients I used are

1 teaspoon sugar
1/2 cup of nonfat vanilla yogurt
1 packet of cinnamon spice instant oatmeal (I used quaker oats)
2 large egg whites
1 tsp pumpkin pie spice
1 medium pear
Dash of salt

1. Peal, core and dice a pear and make it into small pieces
2. Place in a microwave- proof bowl and sprinkle sugar and pumpkin pie spice
3. Microwave on high for 2 minutes
4.Meanwhile, put yogurt, oatmeal, egg whites and dash of salt in blender
5. Add pears. Blend until smooth.
6. Use the small as pancake batter. Makes 3 pancakes

Makes 3 servings

- Instead of using syrup I decided to use fried apples along side my pancake. I left the skin on and used a little butter about half a tablespoon and fried the apples and used a little more pumpkin pie spice just a dash over it all. I only fried one apple and split in three ways

I think the whole recipe per serving is around 4 points?

So I just started weight watchers! Its really easy however it also allows me to obsess over food
like i always do. I made a great chicken divan which is super low fat. I only started tuesday but
i already feel better and since im eating healthier i have more energy. Theres just one problem
I have 100 more pounds to lose haha.

Yesterday was Green Beer day it was awesome! We went to the bars and had a fantastic time. I met some guy and i walked to his house and we smoked haha then pizza was only 50 cents a slice! Deal of the week :)
